Whiskey Pear Cobbler

It's hard to go wrong with cobblers. They require very few ingredients, light, can be made in the last minute and delicious!




Ingredients

All purpose flour - 1 cup

Baking powder - 1 tsp

White sugar - 3/4 cup

Brown sugar - 2 -3 tbsp

Zest of 1 big lemon

Milk - 1/4 cup

Whiskey - 1/4 cup

Butter (melted) - 5 tbsp

Pears (peeled, cored and quartered) - 6


Method

  1. Preheat oven to 400°F

  2. Pour 2 tbsp melted butter to the bottom of the baking dish and grease it.

  3. Place the quartered pear slices on the dish, flat side facing down.

  4. In a medium bowl, mix flour, 1/2 cup white sugar and baking powder. Pour in the remaining melted butter, milk and whiskey. Combine with a whisk until well blended.

  5. In a medium bowl, mix flour, white sugar and baking powder. Pour in the remaining melted butter, milk and whiskey. Combine with a whisk until well blended.

  6. Pour the batter over the pear.

  7. In a small bowl, mix the brown sugar and lemon zest. Sprinkle over the pears.

  8. Bake for 30 - 45 minutes, till it bubbles.

  9. Serve warm with a scoop of vanilla ice cream. It's great served cold too.
