Lemon Cookies

I make these cookies so often. It's a family favorite! With colored lemon icing, it's perfect for the festive season.





Ingredients (makes 60-80)


Cookies

- All purpose flour - 2 1/4 cups

- Caster sugar - 3/4 cup

- Butter (chilled and cubed) - 200g

- Egg yolks - 2

- Lemon zest - 1 lemon

- Lemon juice - 1 lemon


Icing

- Icing sugar - 1/2 cup

- Lemon juice - 1 lemon

- Food colors of your choice (optional)




Method


Cookies

  1. Preheat the oven to 180°C. Line an oven tray with baking sheet.

  2. In a large bowl or a food processor, mix the flour and butter till it forms a mixture like breadcrumbs.

  3. Pour in the lemon juice, egg yolks, lemon zest and sugar. Mix to form a dough. Bring it together and press to make a ball.

  4. On a lightly floured surface, roll the dough to about 3-4mm thickness.

  5. Using a cookie cutter, cut out shapes. Carefully place them on the baking sheet.

  6. Bake till the edges start to brown (10-15 minutes)

  7. Transfer them to a wire rack to cool completely.

Icing

  1. In a small bowl, sift the icing sugar and mix with just enough lemon juice to make a runny icing. If you're using colors, divide the icing sugar equally into small bowls. Mix in the color along with the lemon juice.

  2. Drizzle the icing over the cooled cookies. Let it set before moving them to air tight containers.
