Ingredients
Whole wheat flour - 1 1/2 cups
Baking powder - 2 tsp
Ground cloves - 1/2 tsp
Ground ginger - 1 1/2 tsp
Ground cinnamon - 1 tsp
Powdered white sugar - 1/4 cup
Molasses - 1/4 cup
Granulated sugar for sprinkling - 2 tsp
Powdered sugar for decorating
Softened butter (can also use coconut oil) - 6 tbsp
Maple syrup - 2 tbsp
Egg - 1
Milk - 3/4 cup
Method
Preheat oven to 350°F
Grease an 8" cake pan with butter or coconut oil. Keep aside.
In a mixing bowl, beat the coconut oil or butter and sugar on high speed, till smooth. Beat in the maple syrup and molasses till light and fluffy.
In another bowl, mix the whole wheat flour with baking powder and ground spices. Pour in the milk and mix until smooth.
Pour the batter into the prepared cake pan. Sprinkle granulated sugar on top.
Bake till the top slightly cracks.
Let the cake cool on a wire rack.
Once cool, dust powdered sugar on top to decorate. Using a crocheted doily as a stencil can give it an easy yet intricate design.
