Ingredients
Crust
All purpose flour - 2 1/2 cup
Powdered sugar - 1 tbsp
Chilled butter, cut into cubes - 1 cup
Cold water - 5-7 tbsp
Milk - 2 tbsp
Filling
Green apples (peeled, cored and sliced) - 1 kg
All purpose flour - 1/4 cup
Powdered sugar - 1/2 cup
Brown sugar - 1/2 cup
Lemon zest - 1/2 tsp
Lemon juice - 1 tbsp
Ground cinnamon - 2 tbsp
Ground nutmeg and cloves - 1 tsp
Method
Crust
In a bowl, combine flour and sugar.
Mix in the chilled butter till the mixture resembles a coarse meal.
Blend in enough cold water in tablespoons, to bring the dough together into a ball.
Divide the dough into two. Wrap them in plastic wrap and refrigerate for an hour.
Let the dough soften lightly in room temperature before rolling.
Filling
Preheat oven to 400°F.
In a large bowl, toss the sliced apples with the sugar, brown sugar, ground cinnamon, ground nutmeg and cloves, lemon juice, lemon zest and flour.
Pie
Roll out the dough on a lightly floured surface.
Transfer to the pie dish. Trim the extra dough at the rim. Brush the edges lightly with water.
Fill the apple filling into the crust.
Roll out the second ball of dough.
Use cookie cutters to cut out shapes of your liking. Place them on top of the pie decoratively. Leave gaps between the cutouts to let steam escape.
Brush the crust with milk and dust with remaining powdered sugar (optional)
Bake the pie till the crust turns golden brown and the filling bubbles. It should take a little over an hour.
Let it cool.
